I don't get it, yeah sure his actions afterwards didn't seem like it was hardening Luna but i thought the author was gonna pull something out of his ass at the end like all other authors and say "After all her experience with Adel, she's not so fragile anymore". Now the author didn't even do that, he just contradicted what he wrote as the reason.

Are you fucking reading the same novel? In his conversation with Samuel, when he told Samuel she was fragile, samuel knew he was lying and was just actually worried for her as the MC know how dangerous the upcoming years will be. Originally, Luna should have been kicked out of school and would live normally until the day the demons lose, but because of his intervention, she was able to stay in the acadamy and the MC is guilty and responsible for it, fearing for her.

MCs reason that he might return is bullshit. Even Adel told him that it's not possible, so there's no defined path for him to go back. And why the hell would he worry about something so uncertain? Even if he can go back to Earth what if it takes him 30 years? 40? What he's doing is denying the reality of his situation. Just because you "might" disappear decades later doesn't mean you shouldn't form romantic relationships, right now MC is just acting like he plans to become an asexual bastard for the rest of his stay in this world, which is frustrating as hell.
